I’ll start with this, I should’ve taken the picture before I ate half of it. Its delicious and easy. The only thing was it wasn’t thick, but it was thick enough for me. There is a step you can take with a double layer of cheese cloth over a bowl in the fridge for 3 or 4 more hours. I’m not bothering, I’m happy with the texture. What a taste. I added 1 tsp vanilla and about a 1/2 tsp of raw honey (hopefully that doesn’t kick me out of ketosis). That would mean I consumed just under 1/4 tsp honey (didn’t quite eat half the yogurt). What I did:
I followed the recipe as closely as I could. The only thing I did different was use 4 billion probiotics rather than 10 or 50 billion because that is what I had on hand. I used 3 capsules instead of 2. I mixed this in a glass jar with 1 can of full fat coconut milk. I covered it with cheese cloth with an elastic and put it in the oven. I turned on the oven light and let it sit 42 hours. I checked it at 42 hours and smelled yogurt smell. That was exciting. I kept the cheese cloth off and screwed on the jars cover and put it in the fridge for four hours to chill. Then I added the vanilla and honey. Very happy with the result. Will do that again. I used a wooden spoon for stirring like it says to in the recipe.
As far as I am concerned, a success!
This morning I was at the Leisure Center to exercise and between workouts I rested and began wondering if Ketosis was worth the trouble. I thought to myself, I don’t feel any progress more than the first two levels, which are easier to follow. I though seriously of discontinuing level III. I usually take the elevator upstairs, but once in a while the door is closed and locked and then you need to get personnel to call and have them open the door. I decided to instead go the stairs and drag my left leg up them. Four months ago, I could barely get up stairs anymore and never those stairs. I have taken them recently, but still move up them slowly and with effort to lift this leg of mine up each one. I had my question answered about whether ketosis is making a difference or not. I took the stairs quickly, effortlessly with one leg after the other, not like a toddler the way I had too not so long ago. That was fun, I put all those smiley faces in with a rhythmic beat, which probably doesn’t translate well with words, but it makes sense to me.
