I am having a very productive day! Getting caught up on……………..everything……………..! Got my floors done today, got organized, finishing paperwork, computing and making phone calls! Woo Hoo, feels good! This is my off day for formal exercise and is the perfect day to get all these things done. I have tons of energy, I did all that and I don’t feel the slightest bit tired, WOW! The picture above is a dish I made for lunch today. A recipe from Dr. Wahls’ new cookbook (info about her cookbook on my cookbooks page). This was good, I thoroughly enjoyed this one. Its called Pork Skillet with lean pork chops, greens, asparagus (I used broccoli), onions, I added mushrooms, salt and pepper and a sauce (garlic, olive oil and chives) and I added a lemon squeeze at the end. Very good. I will do this one again.
To give an idea of what a day on this diet (Dr. Wahls) is like for me, this is what I am having today. Note: I have to have 9 cups of vegetables and fruit in these forms
3 cups sulpher vegetables i.e broccoli, asparagus, garlic, tomatoes, onions, cabbage, etc…. 3 cups colored fruits and veggies i.e. red and orange peppers, berries, red cabbage, etc…. 3 cups greens i.e. kale, spring greens, dark green salad, mustard greens, spinach, etc….
Smoothie (small banana, 1/2 cup fresh strawberries, 1/2 cup frozen berries, 1 cup kale, 2 tbsp coconut milk, 1 cup almond milk, 1 tbsp fresh ground flax seed, 1 tsp maple syrup, 1/2 tsp cinnamon, dash of kosher salt, small amount of walnut pieces (less than a tbsp).

3 oz of tuna in olive oil, drained and a glass of V8

2 small boneless pork chops, 1 cup spring greens, 1 cup broccoli (upper stems included), 1/2 cup onion, 3 white mushrooms, 1/2 tbsp saved Nitrate free bacon grease, 1 tbsp extra virgin olive oil, a tbsp chives and 1 clove garlic, fresh lemon juice, salt and pepper.

(I think I am over the sulpher by 1 cup, I think that’s okay. Learning day by day, got a whole lot more to learn, one day at a time. My eventual goal is to eventually get to Dr. Wahls Paleo Plus which is the third stage and most recommended for someone like me. So, I have to get over a few things to get to this stage. First the science, its a Ketosis state (don’t understand yet enough to describe). I am in stage one and learning about stage two, which introduces organ meat, oily fish and fermented foods. Where as I am getting over no sugar and cream in my coffee, I’m not quite ready for that. However, I am mentally preparing myself for the idea and the know how to eat it in the most inoffensive, to me, way possible. Tough one, I dislike all things with a fishy taste and oily fishes are fishy. I love white fish and shell fish. Organ meat terrifies me, but I try to remember my father and his love of organ meat, brain cheese, tripe (cow stomach lining) and tongue (Italian old school). Our ancestors saw organ meat as a treat, not something to hate. I did love Liverwurst when I was a kid, not sure you can buy that anymore. I used to eat it with lots of mustard. I’m not sure its included on the organ bandwagon, since, other than liver, I don’t know what else its made out of. And the world of fermenting?????? Science projects on the kitchen counter. You see what I mean, more to learn.
But, I feel so good, if I gotta eat something’s heart and hold my nose while a I choke down a sardine, well good then! It pales in comparison to a bed ridden future.
